Summer Vegetable Balsamic Quinoa

I don't know about you, but during the dogs days of summer I want light fresh meals that require as little cooking as possible and make enough so that I don't have to cook for days. Enter this dish... 
It's filled with tons of fresh veggies and flavor; it's a great dish to whip up and bring to a picnic or just have in the fridge for dinners and lunches.
Veggie by veggie in the pan, this dish begins to take shape. Veggies in one pan, quinoa simmering in another. The colors and aromas are worth the bit of heat that is put off by the stove.
Once the veggies and quinoa are done - toss it all together. I add in fresh basil and roasted garlic and then drizzle with the balsamic vinegar. That is where this dish shines. The tart and sweet flavor of the vinegar brings out the amazing taste of the veggies.
Serve warm, serve cold. Add whatever protein peeks your interest or let the dish stand alone. A summer stable in your kitchen in no time!

Looks so good. Any recommendation to substitute for the balsamic vinegar (allergies)? Would apple cider vinegar work?
