I've adored this soup since I was a child and have fond memories of mom making it during Sukkot to serve to our company. It sounds so fancy and involved, but in reality is a breeze to make and a sure hit.
Serve it hot. Serve it cold. Add toppings. Make it dairy. Make it vegan. The options are endless and can only enhance this amazing recipe.
For me...all it needs is a good crack of fresh pepper and a sprinkle of sea salt. I enjoy it warm as the evenings get chilled and savor every spoonful.

ReplyDeleteI love cream of carrot soup! And cream of celery and cream of potato and cream of chicken. Any cream soup really are favorites of mine. And I do love when soup season arrives! I could eat soup every day when it's cold outside with a nice loaf of fresh bread. So good.

I've never tried Carrot Soup, it sounds different. Never heard of rice milk either. Wondering if regular milk would work.
