Chia seeds have been all the rage for a while, but I had yet to perfect the "pudding" seen all around the interwebs as the best way to enjoy chia seeds in the am. While I was in Oregon over break, Avi showed me her secret and my chia seed eating life has changed!
Her secret, canned coconut milk...
A breakfast made from 4 ingredients. Cannot go wrong with that? The coconut milk adds a natural sweetness, a little cinnamon and vanilla for added flavor, and the good old chia seeds.
It all melds in the fridge - at least 24 hours for best results. Then I divide it up into mini-mason jars and add a variety of toppings to each jar. Then it's into the fridge for breakfast all week!
My favorite toppings are: bananas, berries, jam, pumpkin butter, and peanut butter. The options really are limitless!

ReplyDeleteI have never tried chia seeds this way. I usually add some chia seeds to water in a container, shake to mix, let them soak and I drink the water through the day.

ReplyDeleteWe do a variety of these in the hotter months... with honey, mandarin oranges, blueberries, raspberries! I love that I can make these the night before and don't have to rush to make breakfast the next day.
