Spiralized Moroccan Beet Salad

Warm summer nights call for no heat suppers am I right? 
Spiralized veggie noodles are also all the rage, right?
So naturally I combined an old NYTimes recipe we've enjoyed for years with the latest craze for the perfect no stove needed supper.
This comes together in no time at all. Is a winner. Really can be enjoyed all year round. Serve as is or add a protein or other veggies. 
**I bought my beet noodles at Whole Foods, but know Wegmans and other markets carry them too - or spiralize them yourself!
