Banana-ChocoNut Bread

When life give yous a ton of bananas leftover from the 7th grade trip to DC...you naturally make banana bread and bring it into work to feed your co-workers, right? Well I did! 

I make mine with no white sugar or oil or gluten - but it's pretty darn amazing, if I do say so myself! 
No white sugar you say...yes. I use this instead. It's amazing and not too sweet. You can use sugar or honey, but really try this!
No oil you say? Yup - apple sauce all the way. Coupled with the bananas it makes it SO moist and less guilt ridden, and who wants a side of guilt with their banana bread?
It was received very well at work and no one could tell there was so white sugar, gluten, dairy, or oil in it!

Banana-Choco-Nut Bread

2 eggs
1/2 cup maple agave blend (or honey, or agave, or sugar)
3/4 cup unsweetened apple sauce
1 tsp vanilla
1 1/2 cup flour (I use a gluten free blend - but you can use regular flour)
1/2 tsp salt
3/4 tsp baking soda
1 tsp baking powder
1/4 tsp cinnamon
2 cups mashed bananas (this was about 5 good sized ones for me)

Mini-chocolate chips
Honey roasted sliced almonds (another Trader Joe's winner)
or mix ins of your choice!

Preheat the oven to 350ยบ. Mix the eggs, agave/maple blend, apple sauce, and vanilla. Mix in flour, salt, baking soda, baking powder, and cinnamon. Add in bananas and any add ins you choose.

Grease 2, 8 inch or 1, 10 inch loaf pans. Pour batter into pan(s) and bake in the oven for 45 to 60 minutes (depending on your pan size).

Then, let cool and ENJOY!

  2. I definitely will have to try this because the bread looks amazing. I can't even imagine the poor families who thought they were going to an activity that is suppose to be fun and it turns out to be a nightmare. My cousin who is the chief of the FBI in Boston is crazy busy trying to find out who did this!
