Gazpacho

Summer arrived early in Boston, as in 3 days of 90+ heat at the end of May/start of June...that meant a cold meal was in order. Enter, the best gazpacho recipe, in my humble opinion! 
It takes maybe a half hour, tops, to throw this together. I always make it the night before so it can really chill and so that the flavors open up. Seriously, night before, you'll thank me.
Chunky, yet smooth, cold, refreshing, this recipe has summer written all over it. I don't mind that it makes an insane amount, because I will eat it all!

  5. Tamar, thanks for the fun words. That necklace is a carved stone and the center round thing spins in side the two sides. It is a fantastic mystery of how they got that wheel to spin inside.
