When life gives you apples...

...you make apple sauce!

I love apple sauce, not the over sweetened stuff, but plain apples in sauce form, apple sauce. I don't even put cinnamon in it! Just apples. So of course, 7lbs of apples called for apple sauce making! 
I used half macintosh, half red delicious. Makes such a great sauce. 
 7lbs of apples netted me 20 apples, all about medium/large.
 I do a rough peel. I like peel in my applesauce, but not an insane amount, since I don't puree/food mill it. If you use a food mill, leave all the peals on, it makes it a rich red/pink color!
 I do a large dice on the apples, super quick and easy.
 A little bit of water, a lid, and some time and voila!
My trick is to turn off the heat and take the lid off right before they are as soft/mushy as you want it. Then let it sit. It thickens up as any remaining liquid evaporates and the sweetness intensifies. No sugar. Just good old natural sweetness!
I got 4 jars full! They were once apple sauce jars, ala Trader Joe's. So 12 dollars bought the jars, and 7ish dollars paid for the apples to fill the jars! The two bags are measured out applesauce for any baking I might do when I don't have a jar of sauce in the fridge.

So, it's all in the freezer for when I am in the apple sauce mood! One jar is on reserve until Chanukah, now those latkes will be extra delicious!

I love homemade applesauce. Nice and chunky. I add cinnamon as it's my fall addiction! Happy hump day!

That LOOKS soooo delicious. You worked hard to make that.

I googled the pond site and it is a city reservoir here. Wow. It only has foot paths to it, but we are going to go for it today. Whaaahooo!

we've got a ton of apple sauce and jam from my mother-in-law.. little does she know.. we are not fans.. but now we have it, so maybe it's time to use it in some baking or pancakes or something..
