Raw-ish "cheese" cakes featuring Udi's

The amazing folks at Udi's gluten free sent me a huge box of products. Honestly, I was blown away by what they sent! There will be many food posts in the next few days, so brace yourselves...
Two of the things they sent me were their snickerdoodle cookies and brownie bites. They had challenged me to try to incorporate a few of the products into new recipes, so I figured these would be perfect in another recipe.
I decided to make vegan raw-ish cheesecake bites. I used both the brownies and snickerdoodles to make the crust and then made the "cheese" mixture out of cashews, lemon juice, coconut, and a splash of apple cider vinegar.
They set up beautifully in the fridge and the cookies and brownies really stood up to the mixture sitting on top of it for a few hours. Super simple, super delicious, super awesome.

Raw-ish "cheese" cake bites:
For the crust:
- 4 Udi's Brownie bites and 2 Udi's snickerdoodle cookies
- muffin liners

For the "cheese":
- 1 cup plain cashews
- 1/2 tbl apple cider vinegar (start with less and adjust to your taste)
- 3 tbl honey (you can adjust it to your taste)
- 1/2 tbl lemon juice
- a small palmful of unsweetened coconut

Smush the brownie bites or cookies into the bottom of a muffin liner and set aside. In a food processor process the reminder of the ingredients. Really let it process until it's really smooth looking. Add more honey if need be (I also needed to use a little almod milk to get it smooth). Spoon the "cheese" mixture into each cup. This yielded 6 mini "cheese" cakes.

Let chill in the fridge for a few hours and enjoy!

*I'd also like to say that the cookies and brownies are awesome plane as a sweet treat! Well done Udi's!

I've done that before, Tamar, made cheese out of cashews! It is amazing how they do taste like cheese, huh? Good for you!
