When life give yous a ton of bananas leftover from the 7th grade trip to DC...you naturally make banana bread and bring it into work to feed your co-workers, right? Well I did!
I make mine with no white sugar or oil or gluten - but it's pretty darn amazing, if I do say so myself!
1/2 cup maple agave blend (or honey, or agave, or sugar)
3/4 cup unsweetened apple sauce
1 tsp vanilla
1 1/2 cup flour (I use a gluten free blend - but you can use regular flour)
1/2 tsp salt
3/4 tsp baking soda
1 tsp baking powder
1/4 tsp cinnamon
2 cups mashed bananas (this was about 5 good sized ones for me)
Honey roasted sliced almonds (another Trader Joe's winner)
or mix ins of your choice!
Preheat the oven to 350º. Mix the eggs, agave/maple blend, apple sauce, and vanilla. Mix in flour, salt, baking soda, baking powder, and cinnamon. Add in bananas and any add ins you choose.
Grease 2, 8 inch or 1, 10 inch loaf pans. Pour batter into pan(s) and bake in the oven for 45 to 60 minutes (depending on your pan size).
Then, let cool and ENJOY!
