Kicking Kale Salad

I love kale. Plain and simple. It's green and leafy. The possibilities of what to do with it are endless. It's awesome. My friend Emily turned me onto this delicious kale salad and as I was whipping it up for lunches this week thought "hey, this is sharing worthy!" 
Other loves? Trader Joe's washed and cut kale. It makes my ability to devour it so much easier. Trader Joe's enables me in so many ways...
These two? The stars of this kale salad (well, besides the kale...). Nutritional Yeast is the vegan equivalent of parmesan cheese. Stop rolling your eyes...try it and you might see where I am coming from. The ume vinegar can be found with the Asian oils/vinegars/sauces in your market (I got mine at Whole Foods).
This really is a winner. It takes no time to throw together - is beyond healthy and well, it's amazing. I recommend!
**notes: "massage the kale" - yes. get your hands in there and actually massage it. it helps the kale soften and makes it fine to eat raw. letting it sit in the fridge after helps it soften even more. trust me. it's good.

I haven't been successful with kale but this definitely looks worth trying! I'm already familiar with the nutritional yeast and I've used it a lot for my vegan daughter. I will look for that vinegar now. I'm ready to massage some kale now. :)

I LOVE kale...and it's so gosh darn good for ya too...WIN/WIN in my book. Whole Foods makes a Kale Salad in their deli section that I now make at home with dried cherries, apple slices, almonds, yum!

I think this salad sounds great and I certainly do t mind getting my hands into my food! I love kale in my soups, but need to try it in other things. I hear kale chips are great!

oh I love kale too! I just posted a recipe on my blog this week for sauteed kale! (I get my kale right from my garden right now!!) I'll have to try this salad - it looks delic!

Looks and sounds amazing, and anything with garlic and ginger is a winner in my book. . . and I'm laughing at the "massage" the dressing in the kale! ;)

Oh I have forgotten about Kale. These days were are hung up on Baked Cabbage. We eat it almost every night!
