Have your caught the chia seed bug? It seems like this little seed is all the rage in the food and nutrition world. I've enjoyed sprinkling it on my yogurt and in my pancakes or oatmeal for sometime, and have finally created my version of a chia pudding that I like!
An easy to throw together breakfast, I usually make two or three at one time and have 3 breakfasts for the week all ready to go.
It's a perfect power packed breakfast. These little seeds fill me up for hours and as a teacher, there is usually no time for a snack mid-morning, so this keeps me full until lunch!And it's pretty easy to put together too, so how can you complain?
My favorite combo is chia seeds + coconut milk yogurt + almond milk + dash of syrup + vanilla and cinnamon + a dollop of home made jam. Mix and let it set.
And breakfast in a mason jar is apparently the latest food trend? How much more modern can you get?

Good day Tamar. I know chia seeds are all the rage right now but all I can think of when hearing the words chia seeds is the old popular Chia Pets. I bet your breakfast drink is delicious though. Anything that fills me up with little calories is what I look for but I just can't try chia seeds. Not yet anyway! Enjoy your day!
Hi, Tamar...I had the same thought as Carol. Shakes with variations are always good to get your morning going, and I might just have to try them.
I thought of Chia pets too...is our age showing? I might have to try this!

My daughter tried to get me into chia a few years ago. I should have perhaps no cancer would have had a chance to grow in me. Great recipe. I love and only follow your recipes because I can eat your kind of food, too.

We love chia seeds! I occasionally do overnight refrigerator oats with chia seeds, alternating between mandarin orange slices, blueberries, homemade strawberry jam... It's such an easy fix for breakfast and I can prepare a few at a time.
chia tea, chia coffee, chia ... sorry, all I can think of is "ch-ch-ch-chia-pet" and a plant infested terracotta dish. hum, I'll have to pass.
I might just give your recipe a try - did you find the chia seeds at Costco?
