Apricot Almond Quinoa Salad

I love making quinoa salads in the summer. A batch can last all week and is a great no cook dinner on warm summer evenings. Enter Apricot Almond Quinoa Salad. A fantastic mix of quinoa, fruit, nuts, avocados, and spices.
 Just whip up the quinoa, let it cool, mix in the fruits and veggies and dressing and you're ready to go!

Oh I am going to try this one. I've never mixed avacodo and apricot...not sure if I will like the combo but I love them both so....Quinoa tabbouleh is delicious if you haven't tried that yet.

One of my fave soups is apricot lentil from the Moosewood Cookbook. SO good.

I love summer salads, as well! Sometimes it is just too hot here to eat much else. This looks light, but also filling.
