Now, just like the spelling of Chanukah, there are a million different latka recipes and everyone thinks theirs is the best.
The basics are the same though: shredded/grated potatoes, some onion, flour and egg to bind it all together, and oil, lots of oil.
Some people mix in other veggies or types of potatoes. Some hand grate, some use a food processor, or even a veggie spiralizer. Some make more patty like latkas and others more free form rustic ones.
No matter what, the end result is a crispy, tasty Chanukah treat. But then, it begs the question...
Topping them with apple sauce or sour cream...?
My personal favorite is a blend of regular and sweet potatoes. I personally like mine more rustic and crispy and topped with lots of apple sauce!

Yum yum yum yum yum!!! I need to make some STAT! I have some homemade applesauce too. Yours look amazing. I've never tried them with a mix of sweet potatoes.
I found an apple and potato latke recipe I used one year and they were baked. Very good.
I put both applesauce *and* sour cream on mine.
Okay - yum! I was trying to explain these to my kids, sort of like a hashbrown I guess.
I had planned on trying to make jelly donuts - I had my raspberry jam all made & ready. My original plan was to use Pillsbury dough like I usually would for quick donuts - but then thought I might be messing it up. I couldn't find anything out there indicating if they are Kosher or not. So that stopped me in my tracks as I didn't want to mess it all up. So more research is needed & probably a recipe from scratch instead. :)

all I can say is, "YUM!".
I think I eat my weight in latkas every year because I have to eat them with applesauce, sour cream and ketchup! Happy Chanukah!

Definitely with applesauce! I always like adding cinnamon to my applesauce as well.
