Roasted Veggie Stacked Enchiladas

Sometimes you just need comfort food...but don't want to spend too much time slaving over the stove. Am I right? I adapted a recipe I saw online to make this super easy, super filling pan of amazingness. 

Enchiladas are a super delicious meal, but all that rolling can be a chore. Also, all the veggies in this make it super filling and a smidge healthier than the traditional version! You can easily adapt this: use your fav veggies, real cheese/fake cheese, corn tortillas/flour tortillas - the world is your enchilada!
Rather than chopping and roasting the veggies for this dish (which by all means you can totally do!) I buy preroasted peppers and cauliflower in the freezer section at Trader Joe's. They also sell pre-roasted sweet potatoes in the cold case. Super big time saver for this dish.

I just put the veggies into the oven to get a bit softer (and less frozen) and then I start building the dish. It's easy to put together from there...
Layer salsa, veggies, cheese, and tortillas. Then roast in the oven until the cheese is all melty. Simple, right?
This easily serves 4-6 people and is super filling. Enjoy!

That looks delicious and nice and easy week night prep too. I think I may try this out. I don't get to Trader Joe's too often but there is one right up the road on Route 1 in Saugus.

I made something similar the other night and it was so good! I used roasted cauliflower, peppers, onions and sweet potato. I layered that with beans, tortillas and salsa verde. So yummy! Stacking is way easier than rolling for sure!

Your stacked enchiladas look amazing! I never knew Trader Joes sold frozen roasted veggies! Good tip for a busy day. I love making taco casserole similar to this with beans and ground turkey filling and enchilada sauce.
