Cold Boston weekends means it's time for warm weekend breakfasts!
I whipped this one up a few weeks back as the temperatures plummeted and it was a fantastic warm start to my day.
The beauty of baked oatmeal is that the recipe possibilities are really limitless. This time I used the base for my Banana Berry Baked Oatmeal and turned it into a pan of peanut butter and banana goodness.I used the ever versatile PB2 powder, adds so much creaminess with a bit less guilt. Topped it all with coconut flakes and popped it in the oven.
This makes enough for 4 breakfasts for me...enjoy!
