Ginger Peach Salmon

Peaches, fresh fish, and grilling scream summer. There is something so simple and delicious about a fresh filet of fish, fresh produce, herbs, and flavors coming together on a hot summer's eve.
This recipe sounds complex, but is so simple to execute and the reward of a delicious dinner is worth it. Salmon, marinated in olive oil and fresh grated ginger. Sliced peaches and red onions coated with oil, garlic, salt and pepper.
Toss it all on the grill and let it cook to perfection. Plate it all up, and top with a simple sauce of rice vinegar, grated ginger, fresh thyme, and olive oil.
This really hits the spot. So easy to prepare and can be made for one or for a crowd. There's still plenty of summer left - bon appetit!

Ah what a great idea! Already have salmon - hope I can keep the ginger to a minimum, as that is one of the few things I don't like to eat. The rest - scrumptious!

Oh my gosh, Tamar! Those photographs are about the most beautiful food pix I have ever seen! The colors! The food seems to jump right off the page at me. I know I can tend to hyperbole, but...wow.

this sounds and looks so tasty - yum! I'm always on the look out for new salmon recipes or variations. No doubt, I am going to try this. Although, tossing the peaches onion mix on the grill won't work for me, because they'd land in the flames :)
