Peanut Butter Baked Oatmeal

There is something about cold weekend mornings that make you want to whip something warm and tasty up in the kitchen. 

A few weekends ago, instead of pancakes, I whipped up some baked oatmeal. A perfect way to enjoy the fresh apple sauce bubbling on the stove and an excuse to turn on the oven too! 
This was so simple, yet filling, and really delicious. A perfect weekend breakfast on a chilly winter's morning. Served fresh from the oven with some fresh apple sauce, but could easily be topped with syrup or fresh fruit, quite versatile.

Just bake and enjoy.

I don't think I have ever heard of peanut butter powder and can't say I've ever had peanut butter and oatmeal blended together. I imagine it is quite good though. Lovely images!

I don't eat "oatmeal" as a breakfast cereal because I hate the mushy texture but I'm thinking in bars baked like this it might be quite tasty.

Other than oatmeal cookies, I don't know that I have ever baked oatmeal (except for a crumble topping)- boy does this look good and just right for these cold mornings.
