One of the customary foods on Rosh Hashanah is apples dipped in honey, to symbolize a sweet new year. Both of these foods make their way into our traditional deserts and there tend to be two camps when it comes to the traditional holiday desert: apple cake or honey cake/cookies. I can and often make both, but this year settled on apple cake!
I tweaked the recipe this year. Instead of the oil, I opted for apple sauce. It made it SO moist (and slightly more healthy...)
The recipe is a funny one. You put all the sugar in with the apples and let it site while you mix the rest of the dough/batter up. You'll think "huh? this isn't right..." but just mix in the sugary apples and watch magic happen!
This year I made it in a few pans instead of one fluted pan. I actually loved doing it this way, and I was able to decorate the top of the cake pans, making it super fancy for the holiday!

**A few notes:
- it will shrink a fair amount after baking, totally normal!
- if you make it in more than one pan, the cooking time will vary - so just check and take them out when they are done!

Looks great and simple! I have heard great things about subbing the applesauce for oil in other baked goods, so I can imagine it boosting this cake's flavor! Would love to make this for September.
