Green Goddess Kale Salad

I love a good kale salad. So healthy, filling, and easy to make a batch that will last a week for delicious lunches to keep me going until 4 when school ends. 

I made this one for the first time back in the spring and just had to make it again to kick off my first round of lunch making for the school year. 
 A kale base, tossed with quinoa, green goddess dressing, pomegranate seeds, and hearts of palm.

The dressing is what makes it. Thick, creamy, full of great nutrients, I can go on. It blends up painlessly in the processor and you're ready to put it all together.
 Seriously. So amazing. It takes restraint to just not eat it out of the bowl.

Once the quinoa is cooked, I toss it all together then throw in the pomegranate seeds and hearts of palm. sometimes I add in a can of chickpeas - really it's up to you!
It makes a ton, enough for 5 lunches and a nice side at dinner (I can promise it doesn't turn you green!). Whip it up and enjoy!

Looks like a fabulous salad to prepare ahead of time. I've had some kale in a salad before and found it surprisingly tasty, and this recipe sounds wonderful.

This looks delicious. I haven't had kale in several years. I got "kaled-out". Guess I ate too much of it when it first became "the thing"! This looks good to me, so I may have to try again!

Oh! I bet Gracyn would love to take this in a school lunch! Will definitely give it a go. She has been bringing salads lately and see loves kale!
