Spinach Mushroom Quinoa Soup

There really something about a warm bowl of soup on a cold winter's night. One that has flavors that just warm the heart and soul.
Enter this soup.
Mushrooms sautéed with onions and garlic. Stewed with veggie stock and quinoa. Flavored with tons of thyme. And some chopped spinach thrown in for good measure.
This is a breeze to throw together. Smells amazing. Is a masterpiece on the taste buds. And is full of superfoods to fill you up.

The last year, there's always spinach in my fridge -one of the reasons is for a variant of this soup! Lots of spinach, mushrooms, onion, and tortellini. My sense is that with quinoa it would be more filling!
