Little Things: Cumin Black Beans and Carrots

Looking for an easy to throw together, sure to please, meatless meal? Look no further. 
This has long been a favorite of mine. It was the dish I always requested upon my return from college at the end of the semester.
It's a fantastic medley of beans, softened carrots and savory onions, the warm taste and scent of cumin, plus a touch of tart lemon juice. What could possibly be bad with that?
So easy to throw together for a weeknight...it tastes amazing with rice or cauliflower rice or even in tortillas. Top with cheese or avocados or just eat as is. Most importantly...enjoy!

When I first saw the picture, I thought the black beans were chocolate chips...that would have been a fright for the taste buds upon biting in! :) I have recently become quite fond of cumin, so this intrigues me!

Sounds interesting! I'm not usually a fan of cooked carrots but mixed with the beans and spices, this sounds so good!
