Nutty Energy Bites

I am well into my year of 2017 road races. I try to run first thing in the morning, especially in summer before it gets to hot. But, I find that I cannot run on a super full stomach...but I need something to give me a boost of energy...enter my take on Larabars, in bite size form!
These are so easy to throw together and so satisfying. Nuts, dates, coconut, and a smidge of honey. All blended together and then rolled into bite size balls. 

I keep mine in the freezer and take one out the night before a run to thaw. Pop it in my mouth to fuel up and then out I run! They're so good actually that I need to use a ton of restraint to just not eat them all whenever I get noshy!

I have seen similar recipes for these and they look so delicious. I need to try them! I often make homemade granola bars which require baking but once they are done and individually wrapped, I have an easy, grab-on-the-go healthy snack! Thanks for the link up and have a fabulous day!
