Pumpkin Power Balls

I am a firm believer that pumpkin is meant to be enjoyed in many more ways than just "pumpkin pie" - don't get me wrong, you can't go wrong with that, but there are numerous ways to enjoy this fall treat! 
Every fall I make a batch of pumpkin cookies, and I love making pumpkin smoothies, and putting pumpkin in my oatmeal. This year though, I decided to try to be daring with pumpkin. 
I figured I would try to make some "raw power balls" like the ones I always see on pinterest. Usually those recipes have protein powder or something else I can't eat. But with pumpkin as the star here I figured I might be able to whip up a winner!
 And winner winner pumpkin dinner (snack?) - these turned out amazing. It took everything in my power to not eat them all while I made them! Small, healthy, easy to make, and easier to enjoy. I can see these being a fall and winter post-workout stable!
* you can use any nut butter, I just had sunbutter in my fridge!
** I used my tablespoon size cookie scoop and then pressed them into balls

I have been on a pumpkin eating frenzy this year! My fav is mixing it in with my oatmeal, BUT these look like they may give my oatmeal a run for its money. Pumpkin AND chocolate chips!! Yum!

These look really good! A couple of questions: (1) When you chill them, do you cover them? (2) Do you think I could substitute maple syrup with honey?
