Creamy Kale and Bean Soup

While winter has been a dud in the snow department, it still has had its fair share of damp and dreary days. Last weekend was blustery and soggy and called for soup! I was craving a few different soups and put the best parts of each of them into this and created a warm and hearty soup!
The base is sauteed carrots, onions, and parsnips (which are totally underrated if you ask me). Then you get creamy goodness with white beans and nutritional yeast (seriously, what is it not good in!). Then kale to make it a quintessential healthy stew!
When you puree the soup you really can appeal to your taste buds. 100% creamy, a but chunky, leave it alone...no wrong answer. I like it about 75% blended for a semi-chunky bowl of goodness. Now, I know it may not look pretty, but growing up as a vegetarian I learned the best stews weren't the most beautiful!

Tamar, I think this looks delicious! I prefer my soups with a similar texture. Thick and creamy, partially blended but with some chunky goodness!

I love soup. We put parsnip in our chicken soup! I have never had kale in a soup though!

I'm still working on liking parsnips. I wonder if having them in something like this, surrounded by so many other flavors, would help???

One of the things allergy tests said I was allergic to is white beans. I never tried them again to see if it was accurate. I am okay with red beans so I eat them sometimes.
